- 1 tsp dried thyme
- 1 bay leaf

Instructions
- Rinse the black-eyed peas under cold water until clear.
- In a large pot over medium heat, sauté the onion and bell pepper until softened (5-7 minutes).
- Add minced garlic and stir for about 1 minute until fragrant.
- Incorporate the ham hock, rinsed black-eyed peas, vegetable broth, cayenne pepper, thyme, bay leaf, salt, and pepper; stir to combine.
- Bring to a boil, then reduce heat to low. Cover and simmer for 40-45 minutes until peas are tender.
- Remove the ham hock, shred any meat back into the soup, then discard bones and skin. Adjust seasoning if necessary.
