- 3–4 boneless, skinless chicken breasts
- 1 medium onion
- 3 cloves garlic
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz)
- 1 cup frozen corn
- 1 packet taco seasoning
- 4 cups chicken broth
Instructions
- Prepare the ingredients: Chop the onion, mince the garlic, and rinse the black beans.
- Cook the chicken: Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent.
- Add remaining ingredients: Stir in diced tomatoes (with juices), black beans, corn, taco seasoning, chicken broth, and chicken breasts.
